Happy White Day! In Japan, March 14th is the day to return the favor after Valentine’s Day. Traditionally, gifts given on this day are white to symbolize purity and "sweet" feelings. Whether you are packing a special lunch for a loved one or just want to celebrate the season, why not bring that snowy aesthetic into your bento (Japanese lunch box)?
Following the tradition of Okaeshi (returning a gift), these five recipes are simple to make, elegant to look at, and perfectly "white" for the occasion. Let’s dive into some bento ideas that are as beautiful as they are tasty!
1. Shira-ae (Mashed Tofu Salad)
This traditional side dish is the ultimate "white" recipe. It uses a creamy tofu base to coat seasonal vegetables. For White Day, we keep the ingredients pale for a sophisticated look.

-
The White Factor: The dressing is made from white tofu, white miso, and white sesame seeds.
-
Ingredients: 150g firm tofu (pressed), 1 tbsp white sesame paste, 1 tsp white miso, 1 tsp sugar, and a pinch of salt. Use 50g of blanched cauliflower or peeled konnyaku (yam cake) as the mix-in.
- Instructions: Mash the tofu until smooth, then whisk in the sesame paste, miso, sugar, and salt. Gently fold in your blanched white vegetables until well-coated.
2. Annin Dofu (Almond Jelly)
While it has roots in Chinese cuisine, annin dofu is a beloved "standard" dessert in Japan. It’s a refreshing, silky treat that fits perfectly in a side container of a bento box.

-
The White Factor: A pure white, jelly-like appearance that looks stunning in a glass or a small treat cup.
-
Ingredients: 250ml milk, 150ml water, 5g agar-agar powder, 3 tbsp sugar, and 1/2 tsp almond extract.
- Instructions: Dissolve agar-agar in water over heat and bring to a simmer. Add sugar and milk, stirring until warm but not boiling. Stir in the almond extract, pour into a flat container, and refrigerate until set. Cut into cubes to serve.
3. Milk Pudding with Amazake
Elevate a simple milk pudding by adding amazake (a sweet, fermented rice drink). This adds a natural Japanese sweetness and a rich texture that is perfect for a White Day surprise.

-
The White Factor: The amazake gives the pudding an opaque, milky-white glow.
-
Ingredients: 200ml milk, 100ml amazake (non-alcoholic), 1 tbsp sugar, and 1 sheet of gelatin (soaked).
- Instructions: Warm the milk and sugar in a saucepan. Remove from heat and stir in the soaked gelatin until dissolved. Mix in the amazake and pour into small ceramic cups. Chill for at least 3 hours.
4. White Miso Glazed Cod
For a savory main, look no further than Gindara Misoyaki. Using saikyo miso (a sweet white miso from Kyoto) keeps the dish light in color and rich in umami.

-
The White Factor: The pearly white flakes of the cod stay bright under the translucent white miso glaze.
-
Ingredients: 2 fillets of cod, 2 tbsp white miso, 1 tbsp mirin (sweet rice wine), and 1 tsp sugar.
- Instructions: Mix the miso, mirin, and sugar. Coat the fish and marinate for at least 30 minutes. Wipe off excess marinade and grill or pan-fry until the fish is cooked through and the glaze is lightly golden but still pale.
5. Shiro-an Daifuku (White Bean Mochi)
Traditional daifuku (stuffed mochi) is a bento favorite. By using shiro-an (white bean paste), you create a completely white-on-white dessert that feels like a little snowball.

-
The White Factor: A combination of white mochiko (rice flour) and sweet white bean paste.
-
Ingredients: 100g mochi flour, 150ml water, 2 tbsp sugar, and 150g shiro-an.
-
Instructions: Mix mochi flour, water, and sugar; microwave in 30-second bursts, stirring until sticky and translucent. Dust your hands with cornstarch, take a piece of mochi, flatten it, place a ball of shiro-an in the center, and pinch the edges closed.
