A healthier alternative to wheat-based pasta, Japanese soba noodles feature the nutty flavor and filling fiber of buckwheat. The Juuwari 100% Buckwheat Soba Noodles are the real deal— specially made with buckwheat alone which means they are gluten-free and impart a pleasant firm texture and earthy flavor. "Juuwari" means 100% and most soba you find are either "hachiwari" (80% buckwheat) or "niwari" (20% buckwheat).
Made in Nagano, where Japan's best soba noodles are produced.
Instructions:
- Fill a large pot with water and boil (1 liter of water per noodle bundle recommended).
- Add noodles and stir gently to prevent sticking. If water bubbles over, lower cooking temperature.
- Cook for 7 minutes.
- Turn off heat, place lid on pot and steam for 2 minutes.
- Drain noodles into a colander, and pour cold running water over the noodles to help remove the slipperiness of the starch and cool the noodles. Swish the noodles to prevent sticking, with chopsticks or your hand (if using your hand, make sure the noodles have cooled a bit).
- If you'd like, you can sip the "soba yu", hot water used to cook the noodles, a healthy tradition in Japan.
- When serving cold: Enjoy by dipping into mentsuyu (a sauce made from dashi, soy sauce, mirin). For more flavors, add some yakumi (condiments) like wasabi, grated daikon radish, grated ginger, nori strips, and chopped green onion.
- When serving hot: Enjoy in soup (made from dashi, mirin, soy sauce, sake, salt). Popular toppings include shrimp tempura and chopped green onion.
