Gochiso Tonjiru (豚汁) is an easy homestyle miso soup loaded with pork and vegetables. You can enjoy it with rice or as a starter with another dish.

What you'll need (makes a single serving):
Ingredients:
80 g thinly sliced pork
1 hondashi packet (1 tsp of dashi powder can be used as a substitute)
2 tbsp miso paste
1/4 carrot, sliced
1/4 yellow onion, sliced
1 large egg
300 ml water
handful of sliced Welsh onion (green onion can be used as a substitute) for garnishing
optional: shichimi togarashi chili spice powder
Directions:
1. bring 300 ml of water to a boil in a YukiHira Nabe pot
2. add hondashi packet (or dashi powder), slices of onion and carrot
3. cover pot and allow ingredients to boil for about 5 minutes, stirring occasionally
4. remove dashi packet and discard
5. add pork and allow slices to fully cook
6. remove scum/fat from the surface of the soup
7. add egg (be careful not to break the yolk!), cover the pot again and allow to cook for one minute
8. add miso paste, stir thoroughly until dissolved and allow to cook for one more minute
9. remove pot from stove, transfer soup to a bowl and garnish with Welsh onion as desired
optional: add shichimi togarashi chili spice powder to taste for an added kick of spiciness
