How to make a Japanese rolled omelette :
Ingredients : 3 eggs, 3 tsp Dashi (japanese soup base, made from bonito), 1 tsp sugar, 1/2 tsp soya sauce, 1/4 tsp salt and vegetal oil.
Beat all the ingredients together. Heat up the Tamagoyaki Pan at medium-low heat. Brush the heated pan with a little oil. When the dot becomes red, pour in about 2 or 3 tsp of egg mixture. Cook gently, and start rolling the omelette with the turner (or chopsticks for purists) to one side of the pan.
Then, pour in again 2 or 3 tsp of egg mixture and make sure the cooked egg is well attached to the uncooked egg. Once the new layer is almost cooked, roll the whole egg to the opposite side. Keep repeating this procedure until there is no more egg mixture.
You can also add cheese slice or nori algae.
