Sanjo YoTsuchime are two Japanese knives with a western finishing (contrary to japanese-style knives, the blade and the handle form just one part).
It has a unpolished blade with evidence of forging, a very special and breathtakingly beautiful collection.
Description :
-The blade : consists in a stainless steel alloy level-3 (SUS410) and a special SLD alloy (contains a lot of chrome which makes the steel hard and sticky so it cuts well and maintains long-lasting sharpness).
-The handle : made of natural wood, it has a nice feeling and fits your hand well. The handle's wood is antibacterial carbonized which gives it an excellent water resistance. The pattented special heat treatment is also protected against bacterials.
How to use it ? What can I cut ?
Two different knives are available in the Sanjo YoTsuchime range :
-Gama : A 17cm (6,7") long blade. Perfect for fish or meat, this chef knife is also suitable for vegetables. $99,70 (69€)
-Small : a 12,5cm (4,9") long blade. For everyday cooking, ideal for fruits, vegetables, herbs... You won't do anything without it. $92,50 (64€)
Maintenance and advices :
- Always use the knives with a wooden cutting board.
- After using, always wash and dry the knives with a soft wiping cloth. Never use the scratchy edge of a sponge.
- Store your knife in a dry and ventilated space.
- Japanese knives are not dishwasher safe.
- Do not cut meat of fish bones.
Sharpening : you may need to sharpen your knife to have a long-lasting sharpness. The best way is to use a whet stone if you have one or a mechanical sharpener.
You can also ask a professionnal to sharpen your knife, for less than $10 per blade.

Sanjo knives are made in the Niigata prefecture in Japan. Sanjo is the name of the town where they are manufactered.
