Here come three knives in very good quality, from Kôchi prefecture's craftmen, on Shikoku island.  

Hokiyama knives are unique in combining a japanese traditional blade and a robust handle from western inspiration. 
We're glad to present three knives, with different sizes and colors.

- Sankoku 180mm
With its 18cm (7") blade, this universal knife will let you cut a good roast beef, chop vegetables or fillet a fresh fish. 

- Brown 135mm
This is an ideal knife for daily use: fruits, vegetables, chicken, etc. 13,5cm (5.31") blade. 

- Black 135mm
High quality chef's knife with elaborated blade. Also suitable for a daily use. 


Features

- Sankoku 180mm and brown 135mm
A beautiful stainless steal which combines two forging techniques. First one, called tsuchime, gives the blade a rough, hammered aspect. The second once, inspired by ancestral Middle East techniques (Damascus steel) is all about folding different lays of steel, depending on carbon level, creating beautiful watering pattern. This blade consists in 17 layers folded. This last technique allows maker to "sign" their work with particular pattern. 

The wooden handle is made of japanese white birch, that are reinforced with three nails. 

- Black 135mm
Contrary to the two previous one, the blade of the black one is composed of 73 layers of stainless steel, wich forms watering patterns on the whole surface of the blade. Handle is in wood, ebony color, reinforced with 3 nails too. 

Maintenance and advices :
- Always use the knives with a wooden cutting board. 
- After using, always wash and dry the knives with a soft wiping cloth. Never use the scratchy edge of a sponge. 
- Store your knife in a dry and ventilated space. 
- Japanese knives are not dishwasher safe. 
- Do not cut meat of fish bones. 

Sharpening : you may need to sharpen your knife to have a long-lasting sharpness. The best way is to use a whet stone if you have one or a mechanical sharpener. 
You can also ask a professionnal to sharpen your knife, for less than $10 per blade.
